I saw two different recipes for rice pudding, plus remembered how my mom makes it (a Russian-style rice pudding) and decided to create my own version. This is definitely the ultimate comfort food.
Ingredients
- 4 cups of Organic Whole Milk (plus more if needed until rice is tender)
- 1/2 cup of Organic Long Grain Rice
- 3 tb spoons of Granulated Sugar (more or less to taste)
- Vanilla extract, a splash
- Zest of half of Lemon
- 1 tb spoon Light Rum
- 1/2 cup of Raisins
Directions
In a small bowl, place raisins and pour rum, mix, set aside.
In a heavy, medium-sized saucepan combine, milk, rice, sugar, and vanilla. Reduce the heat to medium-low and simmer, stirring occasionally, until the rice is tender, about 25 minutes.
Remove from heat, add lemon zest, rum soaked raisins and mix well. Let cool, serve.
