BananaPops2

These little banana pops are elegant and easy to make, not to mention pretty healthy, since there is no flour or eggs. This is a great recipe to make with your kids! Make these for Christmas or New Years and they will be a big hit!

Ingredients

  • 2 Bananas
  • 3 oz Good quality Dark Chocolate (at least 60%), melted
  • 1/2 cup Heavy cream
  • Shredded coconut (sweetened or unsweetened), for topping
  • Walnuts, crushed, for topping

Place dark chocolate chunks into a microwave safe bowl, add heavy cream, place in the microwave to melt for 30 seconds, stir, repeat until all the chocolate is melted and combined with the cream. Set aside and let cool for a minute.

Cut the banana into bite size pieces (disks), you want them to be thick enough to look like candy. Line a cookie sheet with parchment paper.

Place each banana piece into the melted chocolate, make sure it is well covered, and with the help of two forks pick up the banana pops and let the access chocolate drip away, then place on the cookie sheet. Top with coconut and/or walnuts. Repeat for the remaining banana pieces.
