This weekend I decided to switch things up a bit and make Salmon Sliders. I often just bake salmon and serve with a side, but I wanted to make something else other than baked salmon. Since Sockeye Salmon is not my most favorite type of salmon, I thought that transforming it into something would be best. These salmon sliders are moist and flavorful. All the herbs give salmon lots of flavor. This is a great alternative to burgers, and much healthier too!
Ingredients
- 4 slices Bacon
- 1 1/2 pounds Wild Salmon, cut into chunks
- 1 Egg yolk
- 1/4 cup finely chopped fresh herbs, a combination of Green onions (or Chives), Parsley and Dill
- 1 large clove Garlic, grated
- Salt and pepper
- 1 tablespoons Lemon juice
- Oil, for sauteing
- Dinner rolls
- Mayonnaise
For topping
Thinly sliced red onion
Sliced tomatoes
Directions
Heat oven to 375°F and bake bacon on slotted pan or parchment paper-lined baking sheet until crisp, about 18 minutes.
Place salmon pieces in a food processor and pulse a few times, until the mixture resembles ground meat. Place into a bowl and add egg yolk, herbs, garlic, salt, pepper and 1 tablespoon lemon juice. Form the sliders the size of the rolls or buns you will be using.
Heat a nonstick skillet over medium-high heat, add a drizzle of oil. Add sliders and cook for 6-8 minutes.
Place sliders on bun/roll, top with bacon, onion, tomato. Slather bun/roll top with mayonnaise. Serve immediately.
