A few weeks ago, my hubby and I were craving a burger, but because I didn’t have any meat on hand, I decided to make a vegetarian style burger – using black beans. The “burger” has some really good flavors, but unfortunately didn’t satisfy my craving for a meaty burger. However, if you are a vegetarian or want to try something light and new for dinner, make these black bean burgers. The toppings I used are the things we like, but feel free to customize any way you like!!!
Ingredients
- 1/2 medium Yellow onion, roughly chopped
- 1 tablespoon Garlic, chopped
- 2 (15-ounce) cans Organic Black beans, rinsed and drained
- 2 tablespoons fresh Cilantro, chopped (optional)
- 2 teaspoons fresh Parsley, chopped
- 1 Egg yolk
- 1/2 teaspoon Red pepper flakes
- 1/2 cup plain Bread crumbs
- Salt and fresh ground black pepper, to taste
- 4 Hamburger rolls, brioche, dinner rolls, or ciabatta bread
Optional Toppings:
- Tomatoes, sliced
- Romaine lettuce leaves, or any other type you have on hand
- Avocado, sliced
- Red onions, sliced into rings
- Ketchup
Directions
Heat a skillet over medium-low heat.
In a small bowl, add the beans, mash with a fork. This will give you a chunky consistency.
In a large bowl, add onion and garlic, cilantro (if using), parsley, egg, red pepper flakes, and bread crumbs, mix to combine. Add mashed beans, season with salt and pepper, mix well.
Divide remaining mixture into 4 portions and form into patties. Place on hot oiled skillet over medium-low heat and cook about 6 minutes a side or until heated through. Toast hamburger buns. Place a burger on the bottom of each bun. Top with lettuce, tomato, and any other toppings you are using. Cover the burgers with the top of the bun and serve.

Black bean burgers are my absolute favorite!! SOOOOO much better than veggie burgers- especially with a little bit of spice or sriracha 🙂 Yours look DELICIOUS!!
